Whey protein isolate (WPI) is extremely popular amongst athletes due to its ability to be digested very rapidly and beneficial in improving muscle recovery and protein synthesis. Due to the WPI method of filtration, whey isolates tend to be less allergenic than concentrates and other bovine milk or dairy products. WPI typically contains approximately 85-90 percent protein, much higher than whey proteins concentrates (WPC), as well as lower in lactose, carbohydrates and fats compared to WPC. For this reason, many individuals choose WPI over WPC so as to increase lean muscle mass and to effectively enhance muscle recovery. Furthermore, due to the very low content of lactose in WPI, it is highly suitable for individuals who are lactose intolerant.
Manufacturing of Whey Protein Isolate
Similar to the manufacturing of Whey Protein Concentrate (WPC), Whey Protein Isolate (WPI) manufacturing process starts with pasteurised skim milk and held over night. The liquid whey (from the cheese making process) is then drained through a stainless steel screen. Whey liquid is then filtered. The liquid is filtered to one-fifth its original volume, resulting in whey concentrate that is approximately 80% protein, commonly known as WPC.
In the production of WPI, the whey concentrates are further micro-filtered to increase protein concentration to as high as 90%. The final WPI is then spray-dried to achieve whey protein powder.
